Pretzels

Serves 4-6

Ingredients

Dough

  • 2 tsp yeast
  • 3/4 tsp sugar
  • 3/4 cups warm water
  • 2 tbsp melted butter
  • 2 cups flour
  • 1 tsp salt

Topping

  • 1/4 cups baking soda
  • 3 cups water
  • Coarse salt

Instructions

  1. Pour 1/2 cup water into a bowl and add yeast and sugar. Let stand for a few minutes until bubbles appear.
  2. Mix in the remaining warm water and the butter.
  3. In a separate bowl, add in the flour.
  4. Pour in the yeast mixture into the flour and mix briefly.
  5. Add the salt and knead for several minutes, until the dough is smooth and elastic.
  6. Divide the dough into 6 portions and shape into balls.
  7. Let stand for 10-15 minutes.
  8. Roll out each ball to a 60 centimetre rope, leaving the middle thicker than the ends.
  9. Form a V shape, take the ends and make a twist (several centimetres from the ends).
  10. Press the ends onto the sides of the pretzel.
  11. Let stand uncovered for 30 minutes then another 30 minutes in the fridge.
  12. Preheat oven to 200°C.
  13. For the topping, bring water to a boil, reduce heat and add soda.
  14. Dip each pretzel for 5-10 seconds into the water and put them on a baking sheet.
  15. Sprinkle with coarse salt and let stand for a few minutes.
  16. Bake for 15-20 minutes.
