Crumpets

Serves 10 crumpets

Ingredients

  • 250ml room temperature almond milk
  • 200ml warm water
  • 2 tsp dried yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 300g plain flour

Instructions

  1. Pour milk, water, sugar and yeast into a bowl.
  2. Leave to stand for 10 minutes.
  3. Add salt to the flour and gradually add to the yeast mix.
  4. Mix until you get a smooth batter.
  5. Grease a flat bottom pan and set on low/medium heat.
  6. Place greased crumpet rings in the middle.
  7. Ladle 1 cm of batter into each ring.
  8. Cook for 7-10 minutes until the top is dry and rubbery with lots of holes.
  9. Remove the crumpets from the rings and place them upside down into the pan.
  10. Cook for a minute or two until the tops are golden.
