Serves 10 crumpets
Ingredients
- 250ml room temperature almond milk
- 200ml warm water
- 2 tsp dried yeast
- 1 tsp sugar
- 1 tsp salt
- 300g plain flour
Instructions
- Pour milk, water, sugar and yeast into a bowl.
- Leave to stand for 10 minutes.
- Add salt to the flour and gradually add to the yeast mix.
- Mix until you get a smooth batter.
- Grease a flat bottom pan and set on low/medium heat.
- Place greased crumpet rings in the middle.
- Ladle 1 cm of batter into each ring.
- Cook for 7-10 minutes until the top is dry and rubbery with lots of holes.
- Remove the crumpets from the rings and place them upside down into the pan.
- Cook for a minute or two until the tops are golden.
