Spinach and Pea Soup

Serves 2

Ingredients

  • 1 onion, diced
  • 1 clove garlic, minced
  • 1 cup blanched spinach
  • 1 1/2 cup frozen green peas
  • Salt and pepper to taste
  • 1/2 tsp dried thyme
  • Pinch cayenne
  • 1 cup vegetable stock
  • 1 cup water
  • 1/4-1/3 cup coconut cream
  • 2 tbsp sliced almonds, toasted

Instructions

  1. Sauté onions with olive oil until golden and slightly caramelised.
  2. Add garlic and cook for one minute.
  3. Mix in spinach and cook until soft.
  4. Add green peas and cook for a few minutes, until just soft.
  5. Add seasoning to taste.
  6. Set 1/2 cup aside for topping.
  7. Add vegetable stock and water gradually and simmer for a few minutes.
  8. Stir in coconut milk and blend with a blender stick.
  9. For topping, layer some of the spinach and peas on top and sprinkle toasted almonds to finish.
